Serve as a snack with sour cream or with dressing from greens.
Ingredients
- 3 average size carrots
- 1 small cauliflower
- 1 egg
- 200g Cheddar cheese
- 150-200g breadcrumbs
- 2-3 garlic cloves
- 300g pumpkin (we used a honey pumpkin, but any other can be used as well)
- A pinch of grinded nutmeg
- ½ teaspoon dried thyme
- Salt and pepper to tast
Instructions
- Grate cheese, carrots, cauliflower and pumpkin into chips. Press garlic through the garlic press. Add egg, nutmeg, thyme, salt and pepper. Mix everything together in a homogeneous mass.
- Divide the mass into small pieces and roll small balls by hands.
- Lay the greaseproof paper on a pan put the balls on it. Bake in the oven for 35-40 minutes at 200C.
